Bean muffin: a tasty savory snack by Chef Gregory

bean cake muffins (1)

Prep time: 15 minutes
Cooking time: 45 minutes

Typically my association with muffins is always sweet flavours. I mean who doesn’t love a vanilla or red velvet muffin? When it was the time to do this week’s recipe, I was pleasantly surprised when I came across the Instagram page @diaryofanaija chef. The food on the page was very creative. I saw pineapple fried rice in an actual pineapple, amongst other creative dishes. Chef Gregory suggested showcasing a bean muffin recipe. It seems outside the box but it is actually a very creative and innovative way of making a bean-based meal. I think it is important if you can to learn how to make variations of your favourite meals both for the sake of practicality and to ensure you get all your nutrients. Deciding what to make for breakfast, lunch, dinner, and snack time day after day is not easy. It can honestly be very stressful especially if you are busy and on the go, so I hope this recipe will be an added bonus in your culinary journey.
