Blueberry Banana Bread

Cut back on fat without sacrificing flavour and texture. This combination of banana and blueberries made the bread or should we say cake amazingly delicious and moist. We would advise you use very ripe bananas and make them into muffins for the kids.

Ingredients

160 g flour

1 cup blueberry

4 pcs banana

2 tbsp butter

2 tbsp applesauce

1 tsp baking soda

2 pinch salt

110 g brown sugar

2 pcs eggs

1 tsp vanilla essence

 

Method

 

Preheat the oven to 350 degrees F and grease an 8 x 4 inches loaf pan.

Combine the flour, ¾ teaspoon of baking soda and salt in medium bowl and set aside.

Cream the butter and sugar in a large bowl with an electric mixer. Add the egg whites, banana (peeled and mashed), vanilla essence and applesauce. Beat at medium speed until thick and scrape down the side of the bowl.

Gently add the flour mixture and blend at low speed until well combined but do not over mix.

Fold in the blueberries and pour the batter into the already prepared pan. Bake in the centre of the rack until a skewer inserted into the centre comes out clean.

Remove from the oven and allow to cool for about 20 minutes.

Serve.
