Easy fresh tomato stew recipe

Since it’s tomato season, one of the most liked stew recipes in Nigeria is fresh tomato stew, which takes 80 minutes to create and is inexpensive and simple to make.

ingredients

1 kilogram of beef
half paint of fresh tomatoes
fresh pepper.
Shombo
Two bulbs of onion
a teaspoon of nutmeg powder.
a teaspoon of curry powder and thyme.
fresh ginger
fresh garlic
curry leaves
half-bottle of vegetable oil.
four seasoning cubes
Add salt to taste.
One teaspoon of chicken spice

Preparation

Wash the tomatoes, fresh pepper, shombo and one onion and blend together.
Blend the ginger and garlic and set aside.
Slice the other onion and set aside.

Wash the beef and parboil with the four seasoning cubes, a teaspoon of salt, teaspoon each of curry and thyme and half cup of sliced onions.
Also add the chicken spice.

Allow the meat to cook until it is soft enough for consumption.
Remove the meat from the stock and allow to drain in a sieve.
Set your frying pan on fire.

Add the half bottle of vegetable oil and fry the meat until it is golden brown, then remove it and drain on a paper towel. Add the sliced onions to the oil and fry for about 2 minutes to release the aroma into the oil.
Then pour the blended tomatoes/pepper and fry (stir to avoid burning).

When the tomato is dried, add the blended ginger and garlic, nutmeg and stir, then add the meat stock, then taste for salt.
Allow to cook for ten minutes then add the curry leaves and the fried meat.
Serve with boil rice or yam.
