Bean muffin: a tasty savory snack

It seems outside the box but it is actually a very creative and innovative way of making a bean-based meal. I think it is important if you can to learn how to make variations of your favourite meals both for the sake of practicality and to ensure you get all your nutrients. Deciding what to make for breakfast, lunch, dinner, and snack time day after day is not easy. It can honestly be very stressful especially if you are busy and on the go, so I hope this recipe will be an added bonus in your culinary journey.

1 overripe plantain
1 teaspoon baking soda
1 Maggi cube 1 teaspoon pepper
1 tablespoon of crayfish
1/4 cup Groundnut oil (or any oil of choice)
1 cup hot water
1 fresh egg beaten

Bean muffin Instructions
• Pour beans flour into a bowl, add seasoning, pepper, and crayfish
• Add hot water, stir, leave to sit for 10 minutes
• Mash overripe plantain and pour into beans mixture
• Add oil, stir till properly incorporated
• Line muffin tray, pour beans mixture into the tray
• Bake on medium heat, till it sets. Brush with egg, let it bake for 5 more minutes. (Insert a wooden stick to be sure it is properly dry)
• Allow to cool, serve
